ABOUT Anarse Ki Goliyan.. RECIPE

A yummylicious superb snack that can be prepared both instantly and in the traditional way. Here iam presenting the traditional way of making it during festive season of Diwali. The melt in the mouth super soft balls makes for a delicious snack loved by everyone. The process is a bit elaborate but the end result that you get is worth all that efforts put in by you. Rice grains need to be soaked in water for 2 to 3 days and then grinded. They are dried in the sun until just semi dried. The dough which is made thus also is given a standing time of 12 hours atleast. This is the speciality of this recipe and tastes out of the world. An extraordinary delight for the whole family.

Ingredients Serving: 6

  1. Raw rice 1 cup
  2. Powdered sugar 1/3 cup
  3. Cardamom powder 1/2 tsp
  4. Ghee 2 Tbsp
  5. Yogurt 3-4 tbsp
  6. Sesame seeds 3 tbsp for coating
  7. Oil for frying.

Instructions

  1. Soak rice for 3 days changing the water everyday.
  2. After 3 days, dry them in the sun for an hour or two until they remain little wet and not completely dry.
  3. Grind them little coarsely in a dry grinding jar
  4. The grinded rice flour looks like this.
  5. Now add in the sugar and the cardamom powder.
  6. Next add in the ghee and the yogurt.
  7. Make a smooth dough out of all these and if required use little water.
  8. Cover this dough with a wet cloth and keep aside for 12 hours. So in all it requires 3 days of soaking firstly and then 12 hours of standing time before finally frying them.
  9. Keep the covered dough on the kitchen counter.
  10. After 12 hours, the dough looks like this.
  11. Make small balls out of it.
  12. Roll these balls in sesame seeds. Coat them all evenly.
  13. Deep fry on low to medium flame by turning over them slowly with a wooden spatula. Care should be taken while frying.
  14. Serve them hot or can store them in airtight containers after they cool down. Relish them upto 15 days.
  15. In case they break while frying, add some rice flour to bind them. Drop one ball at first to check. But with this recipe you will not be disappointed. Mine did not break while frying. Also remember to give the dough a standing time of 12 hours. This step is an important one. Happy Cooking !!!!!
