I learnt this delicious and healthy dish from my mom. Its a perfect dish for kids as its a wholesome meal filled with spinach, cottage cheese, broccoli etc

Ingredients Serving: 2

  1. Uncooked rice - 1 cup
  2. Cottage cheese or paneer cubes - 250 gms
  3. Milk - 1 cup
  4. Medium sized onion sliced - 1
  5. spinach - 1/2 bunch
  6. Broccoli - few florets
  7. garlic cloves - 2
  8. Fresh cream - 2 tbsp
  9. jeera - 1/2 tsp
  10. Oregano - 1/2 tsp
  11. Black pepper - 1/4 tsp
  12. sugar as per taste and Salt to taste
  13. For white sauce:
  14. Milk - 1/2 to 3/4 cup
  15. Maida/flour - 1 tbsp
  16. butter - 1 tbsp
  17. Grated cheese - 1 to 2 cubes
  18. Salt and sugar as per taste

Instructions

  1. For the rice: take a big pan, heat some ghee and,add onions and let it splutter.
  2. Once the onions turn golden, add the rice, 3 cups water, little salt and let it cook.
  3. For the spinach puree: take some water in a pan, add salt and cook the spinach for about 5 mins. Remove and drain under cold water.
  4. Grind the spinach after cooling it along with garlic cloves in a blender.
  5. Heat oil or ghee in a pan, add the broccoli florets and sauté for few mins. Add the spinach puree and cook for a few mins, add the oregano, black pepper, salt, sugar.
  6. Add the cottage cheese cubes.Now add fresh cream and milk and mix well.
  7. For the white sauce: Take butter in a pan, add maida and cook till light golden brown. Then add milk, sugar and salt and keep stirring so that no lumps are formed.
  8. Now take a borosil or an oven safe bowl and put one layer of spinach gravy, one layer of rice, again a spinach layer, rice and top it with white sauce.
  9. Your dish is ready to serve.
