Chicken and Maggi noodle Soup

Craving a simmering, comforting bowl of hearty soup? Try this easy chicken soup recipe that has your favourite Maggi noodles in it!

Ingredients Serving: 4

  1. 250 grams boneless, skinless chicken breasts
  2. salt and freshly ground black pepper, to taste
  3. 4 cups chicken stock
  4. 2 cloves garlic, minced
  5. 1 tsp butter
  6. 1 onion, diced
  7. 2 carrots, peeled and diced
  8. 2 stalks celery, diced
  9. 1/4 teaspoon dried thyme
  10. 1/4 teaspoon dried rosemary
  11. 2 Bay Leaves
  12. 1/4 cup heavy cream
  13. 1/8 cup all-purpose flour/cornflour
  14. 2 packet maggi noodles
  15. 2 tablespoons chopped fresh parsley

Instructions

  1. Season chicken with salt and pepper, to taste. In a pan, melt the butter and stir fry the garlic, onion, carrots, celery, thyme, rosemary and bay leaves; season with salt and pepper, to taste.
  2. Add in the chicken and the chicken stock and cook for 30 minutes. Remove 1 cup of chicken stock,
  3. Remove chicken and shred, using two forks. In a large bowl, whisk together flour and reserved 1 cup chicken stock mixture.
  4. Stir chicken, flour mixture and noodles into the slow cooker. Cover and cook on low heat till the noodles are tender and soup is slightly thickened. Stir in cream. Serve immediately, garnished with parsley.
