Ingredients to make Brinjal Fritters

  • Brinjal - 3 thinly sliced
  • moong dal - 4 tbsp
  • urad dal - 4 tbsp
  • maida - 3 tbsp
  • ginger Garlic Paste - 1 tsp
  • green chilly - 2 chopped finely
  • turmeric powder - ¼ tsp
  • chilly powder - 1 tsp
  • amchur powder - ½ tsp
  • coriander powder - ½ tsp
  • cumin powder - ½ tsp
  • coriander leaves - 2 tbsp Chopped
  • salt to taste
  • water as required
  • oil - 1 cup

How to make Brinjal Fritters

  1. Slice the brinjal in thin slices, add little salt, mix well and keep aside.
  2. Grind the dals into fine powder. Take all the ingredients in a mixing bowl and mix well
  3. Add water and make a smooth batter. The batter should not be too thin nor too thick.
  4. Add chopped coriander leaves and mix well.
  5. Heat oil in a pan.
  6. When the oil is hot, reduce the heat and dip the brinjal ino the batter and drop them in the hot oil.
  7. Fry them in batches in low-medium heat for 2-3 mins.
  8. Flip over and fry till golden and crisp.
  9. Drain in absorbent paper and serve with any chutney as a snacks or as a starter or side dish.
  10. Ready to serve
