Paan Ice-cream

Ingredients to make Paan Ice-cream

  • Non dairy whipping cream 2 cups
  • Heavy cream (I used Amul) 1 cup
  • sugar powered 3/4 cup
  • Vanilla extract 1 tsp
  • 6 betal leaves (paan)
  • Gulkand 3 tbsp
  • Paan chutney 2 tsp
  • Paan essence or peppermint oil 1tsp
  • rose syrup for decoration

How to make Paan Ice-cream

  1. Grind paan leaves with little water and remove the extract
  2. Add gulkand paan chutney and paan essence to the extract
  3. Mix well and keep aside (you can add few drops of green colour-optional)
  4. In a bowl take ground sugar, whipping cream, fresh heavy cream and vanilla extract
  5. Whip the mixture till soft peaks form
  6. Add the paan mixture and mix lightly with spatula
  7. Freeze the mixture for 6-7 hours
  8. Decorate with rose syrup

My Tip:

I used Tropolite whipping cream. Thaw the cream before use but do not bring to room temperature
