ABOUT CURD RICE RECIPE

A very soothing refreshing south Indian summer meal.

Ingredients Serving: 2

  1. Boiled Rice 1 cup
  2. Thick curd 1 cup
  3. Cucumber half
  4. Salt 1/2 tsp
  5. Black pepper powder 1/2 tsp
  6. Oil 1 tbsp
  7. Cumin seeds 1/2 tsp
  8. Chana dal 1 tbsp
  9. Cashews 5
  10. Almonds 5
  11. Curry leaves 10 - 12
  12. Whole red chilli 2
  13. Boiled corn kernels 1 tbsp

Instructions

  1. Chop cucumber finely. Chop nuts in big pieces.
  2. Whisk curd well. Add chopped cucumber and mix.
  3. Season curd with salt and pepper.
  4. Add boiled rice to curd and mix well. Mash rice slightly with back of a ladle.
  5. Chill this rice mix for an hour.
  6. Prepare tadka.
  7. Heat oil in a pan. Splutter cumin seeds.
  8. Add drained chana dal. Saute for while.
  9. Add chopped nuts. Roast.
  10. Add curry leaves and whole red chilli. Roast.
  11. Add corn kernels and fry for a minute.
  12. Pour this tadka over curd rice. Give a nice stir.
  13. Serve chilled.
