Ingredients to make Curd Mango delight

  • Hung curd - 1 1/2 cup
  • mango pulp- 1 cup( Fresh, sweet and thick )
  • dry fruits- 1/4th cup
  • cardamom powder- 1/2 tsp
  • mango diced - 1/4th cup
  • honey - 2-3 tbsp
  • For Garnish - Raisins, mango pulp, Chocolate Syrup

How to make Curd Mango delight

  1. For Mango Pulp - Wash, peel Mangoes, make slices, blend it till smooth paste.
  2. For hung curd - Tie curd in muslin cloth and keep it for 2-3 hrs or overnight.
  3. In a bowl take Mango pulp. Whisk well. Add hung curd. Whisk till it forms nice creamy texture.
  4. Add Honey and cardamom powder. Mix well. Adjust it depend on sweetness require.
  5. Add dry fruits and diced Mangoes. Fold it in curd mixture.
  6. Pour it into a deep freezer safe container and put it in the freezer.
  7. Every after 45 minutes stir the ice cream mixture vigorously. This will help it freeze slowly and take on a soft creamy texture instead of freezing into a solid ice block.
  8. Keep stirring the ice cream every​ after 45 minutes until it has frozen completely. This will take approx 3-4 hrs.
  9. Garnish it with raisins. Serve chilled.

My Tip:

* Use Fresh and sweet Mango pulp for good result. * Instead of Honey, date Syrup can also be used. * Stir ice cream continuously every after 45 minutes until it has frozen completely to get a nice soft creamy texture.
