ABOUT Avial RECIPE

Avial is a dish of Kerala. It is a traditional dish prepared during the festival of Onam.

Ingredients Serving: 4

  1. 1 cup chopped carrot
  2. 1 cup chopped raw plantain
  3. 1 cup chopped bottle gourd
  4. 1 cup chopped pumpkin
  5. 1 cup chopped colocassia
  6. 2 drumsticks cut into small pieces
  7. I cup beaten curd
  8. 1/2 teaspoon turmeric powder
  9. Salt as per taste
  10. 3 cups water
  11. Curry leaves 2 stalks
  12. Grated coconut 1 cup
  13. Green chilli 2
  14. Cumin seeds 1 teaspoon
  15. Dry red chilli 2
  16. Mustard seeds 1 teaspoon
  17. Fenugreek seeds 1/2 teaspoon
  18. Oil 1 tableapoon

Instructions

  1. Take all the vegetables in a pan.
  2. Add water and salt to it and cook.
  3. Take coconut, green chillies and cumin seeds in a mixer jar and make a paste of it. Keep it aside
  4. When the vegetables are half cooked add turmeric powder and coconut paste in it and cook till the vegetables are done.
  5. Now add the beaten curd and let it simmer for a minute.
  6. For tempering take oil in a pan.
  7. When the oil becomes hot add in dry red chillies followed by mustard seeds, curry leaves and fenugreek seeds.
  8. Pour the tempering into the avial and cover the pan for a minute.
  9. Serve avial hot with steam rice
