Bhapa Doi (Steamed Yogurt)

Ingredients to make Bhapa Doi (Steamed Yogurt)

  • Unflavored Greek yogurt - 500 gms
  • Sweetened condensed milk / Milkmaid - 200 gms
  • almonds - 10 (skin out & finely sliced)
  • pistachios - 15 (skin out and finely sliced)
  • saffron - few strands
  • cardamom powder - 2 pinches

How to make Bhapa Doi (Steamed Yogurt)

  1. Pre-heat oven to 180°C.
  2. Meanwhile whisk the Greek yogurt and milkmaid together to a smooth mixture. Make sure there are no lumps.
  3. Make fine slices of almonds and pistachios.
  4. Add one portion of dry fruits to yogurt and save some for garnishing. Add few pinches of cardamom powder.
  5. Fill the mixture in the ramekins or baking dish.
  6. Reduce the temperature to 140°C. In a large baking tray pour some hot water. Place the ramekins or baking dish carefully in the baking tray and bake for 20 minutes at 140°C.
  7. Turn off the heat and leave it for additional 10 minutes in oven not more than that, else yogurt will release water.
  8. Bring to room temperature. Refrigerate for 2 hours or overnight.
  9. Garnish with balance nuts and Serve cold.

My Tip:

Follow the baking temperature and time for perfect results. Replace greek yogurt with hung curd if not available.
