Basic khandvi recipe with twist of cheesy taste and green colour because of spinach ..recipe credit chef sanjeev kapoor.

Ingredients Serving: 4

  1. Gram flour 1 cup small
  2. Maida 1 tablespoon
  3. Salt to taste
  4. Turmeric powder 1/2 teaspoon
  5. Chilli powder 1/2 teaspoon
  6. Asafoetida(hing) a pinch
  7. Ginger small piece +1 green chilly and 7-8 spinach leaves puree 2 tablespoonful
  8. Buttermilk 3 small cups or 1 cup curd and 2 cups water whisked well
  9. Cheese spread 2 tablespoon
  10. For tempering:
  11. Oil 1 tablespoon
  12. Mustard seeds 1/2 teaspoon
  13. Cumin seeds 1/2 teaspoon
  14. Sesame seeds 1/2 teaspoon
  15. Curry leaves few

Instructions

  1. Mix all ingredients in a non-stick pan except spinach puree.
  2. Cook about 4-5 min with constant stirring
  3. Add spinach- ginger- chilly puree, Cook till mixture leaves sides of pan
  4. Grease thali with oil, Spread cooked mixture (thin even layer)
  5. Let cool it then spread cheese
  6. Cut and roll .
  7. For tempering heat oil add mustard seeds, cumin seeds, curry leaves, sesame seeds .
  8. After seeds splutter, pour tempering on stacked khandvis.
  9. Ready to serve.
