Spongy and soft steamed cake made with flour, curd and banana mixture

Ingredients Serving: 5

  1. All purpose flour/ maida 1 cup
  2. Wheat flour 4 tbsp
  3. Milk powder 1/2 cup
  4. Ripe banana 1
  5. Sugar powder 1/2 cup
  6. Curd(not sour) 1 cup
  7. Vanilla essence few drops
  8. Milk as needed
  9. Baking powder 1 tsp
  10. Baking soda 1/4 tsp
  11. Chopped cashews
  12. Raisins

Instructions

  1. Sieve maida, wheat flour, milk powder, baking powder, baking soda 2-3 times and keep aside
  2. Take curd, oil, sugar powder in a vessel and beat till a smooth texture. Then add banana puree and mix.
  3. Add sieved flour mix in the curd mixture and mix well
  4. Add milk to make lump free batter
  5. Add vanilla essence and mix well
  6. Pour this mixture in a greased cake mould. Sprinkle chopped cashews and raisins
  7. Steam it for 20-25 minutes then check with toothpick, if not done steam for few more minutes..
  8. When done turn off the gas, let it cool for some time then demould. Enjoy this banana cake with tea or coffee
