Ingredients to make Ragi Ambali / Summer cooler

  • Ragi flour 1 cup
  • water 2 cups (250 milliliter) + 1 1/2 tablespoon
  • curd 1/2 cup small
  • salt to taste
  • Roasted cumin powder 1/2 teaspoon
  • mint leaves 1 tablespoon finely chopped
  • coriander leaves 1 tablespoon
  • asafoetida(hing) a pinch

How to make Ragi Ambali / Summer cooler

  1. Boil 2 cups water in a wide bottom pan
  2. Add 2 tablespoon warm water to the ragi flour and make smooth paste without any lumps .
  3. Add this paste to the boiling water and keep stirring so that there are no lumps.
  4. keep it on medium flame for 2 minutes and switch off the stove .
  5. Allow this mixture to cool.
  6. Meanwhile whisk curd..add 1 cup water to curd and blend well.
  7. Once ragi mixture reaches room temperature, mix blended curd, salt, jeera powder, asafoetida. Garnish with mint leaves, cumin seeds, coriander leaves and serve

My Tip:

Refrigerate for an hour before serving. It tastes better.
