ABOUT Bean salad with herb dressing ! RECIPE

Mixed beans and fresh veggies tossed with lime and olive oil dressing, with a sprinkle of Italian herbs is filling and so full of protein and fiber. Great for gatherings and as a meal by itself.

Ingredients Serving: 4

  1. 1/4 cup : black eyed beans
  2. 1/4 cup : chickpeas
  3. 1/4 cup : kidney beans
  4. 1/4 cup : boiled sweet corn kernels
  5. 2 tbsp : chopped red bell pepper
  6. 2 tbsp : chopped green bell pepper
  7. 3 tbsp : olives sliced ( black )
  8. 3 tbsp : chopped onion
  9. 2 tbsp : extra virgin olive oil
  10. 2 tbsp : lime juice
  11. 1 tsp : garlic powder
  12. 1/4 tsp : dried rosemary
  13. 1/4 tsp : dried basil leaves
  14. 1/4 tsp : dried parsley
  15. 1/4 tsp : dried thyme
  16. 1/2 tsp : red chilli flakes
  17. 1/4 tsp : white pepper powder
  18. 1/4 tsp : salt
  19. Few sprigs : coriander chopped

Instructions

  1. Soak the beans in enough water overnight.
  2. Next morning pressure cook until soft but not mushy.
  3. Later add in the rest of the ingredients to the boiled beans and give them a good toss.
  4. Taste and adjust seasoning to preference.
  5. Serve warm or cold .
  6. Proteinious meal ready to dive in !
