ABOUT Dudhi muthiya RECIPE

Multigrain muthiyas made with grated bottle gourd and curd makes this a very healthy dinner option.

Ingredients Serving: 4

  1. Wheat flour- 1 cup
  2. Jowar flour- 2 tbsp
  3. Bajra flour- 2 tbsp
  4. Besan- 2 tbsp
  5. Rice flour- 2 tbsp
  6. Rava- 1 tbsp
  7. Grated bottle gourd- 1 1/2 cup
  8. Curd- 1/2 cup and more if needed
  9. Ginger, chilli and garlic paste- 2 tsp
  10. Salt
  11. Turmeric- 1 tsp
  12. Lemon juice- 1 tbsp
  13. Sugar- 1 tbsp
  14. Garam masala- 1 tsp
  15. Cumin seeds- 1 tsp
  16. Fennel seeds- 1 tsp
  17. Soda- 1/2 tsp
  18. For tempering:-
  19. Oil- 2 tbsp
  20. Mustard seeds- 1 tbsp
  21. Sesame seeds- 1 tbsp
  22. Red chillies- 2
  23. Curry leaves- 10
  24. Coriander to Garnish

Instructions

  1. Take all the flours in a bowl and add ginger chilli paste and grated dudhi.
  2. Add all spices and curd. Mix to form a soft dough without adding water.
  3. Dudhi releases water and curd helps in making soft muthiyas.
  4. If needed add more curd. Now with oiled hands make cylindrical muthiyas and keep to steam in a steamer.
  5. Make muthiyas from full dough.
  6. Cover the steamer and cook for 10 minutes. Check with knife or toothpick whether done.
  7. Remove all muthiyas in a plate.
  8. Now cut into pieces.
  9. Take a nonstick pan and prepare tempering by heating oil and then adding mustard seeds, sesame seeds, curry leaves and red chillies.
  10. Now put all muthiya pieces in the pan and mix with spatula lightly.
  11. Serve hot garnished with coriander.

My favorite. I like to eat steamed one too when still hot.
