Ingredients to make Dudhi muthiya

  • wheat flour- 1 cup
  • jowar flour- 2 tbsp
  • Bajra flour- 2 tbsp
  • besan- 2 tbsp
  • Rice flour- 2 tbsp
  • Rava- 1 tbsp
  • Grated bottle gourd- 1 1/2 cup
  • curd- 1/2 cup and more if needed
  • ginger, chilli and garlic paste- 2 tsp
  • salt
  • turmeric- 1 tsp
  • lemon juice- 1 tbsp
  • sugar- 1 tbsp
  • Garam masala- 1 tsp
  • cumin seeds- 1 tsp
  • fennel seeds- 1 tsp
  • Soda- 1/2 tsp
  • For tempering:-
  • oil- 2 tbsp
  • mustard seeds- 1 tbsp
  • sesame seeds- 1 tbsp
  • Red chillies- 2
  • curry leaves- 10
  • coriander to Garnish

How to make Dudhi muthiya

  1. Take all the flours in a bowl and add ginger chilli paste and grated dudhi.
  2. Add all spices and curd. Mix to form a soft dough without adding water.
  3. Dudhi releases water and curd helps in making soft muthiyas.
  4. If needed add more curd. Now with oiled hands make cylindrical muthiyas and keep to steam in a steamer.
  5. Make muthiyas from full dough.
  6. Cover the steamer and cook for 10 minutes. Check with knife or toothpick whether done.
  7. Remove all muthiyas in a plate.
  8. Now cut into pieces.
  9. Take a nonstick pan and prepare tempering by heating oil and then adding mustard seeds, sesame seeds, curry leaves and red chillies.
  10. Now put all muthiya pieces in the pan and mix with spatula lightly.
  11. Serve hot garnished with coriander.

My Tip:

You can add more vegetables like cabbage and carrots.
