Pressure cooker version of stuffed brinjals.Easy to prepare and tastes amazing.

Ingredients Serving: 4

  1. 1/2 kg brinjals
  2. 1 large onion, chopped
  3. 1/4 cup fresh/dry grated coconut
  4. 1/4 cup rosted groundnut powder
  5. chilly powder 1& 1/2 tbsp (adjust)
  6. 1 tbsp garam masala powder
  7. coriander leaves ,chopped
  8. salt to taste
  9. 2 tbsp jaggery, grated
  10. 1 tbsp oil
  11. 1 kokum


  1. Wash brinjals, and make a cross slit from the bottom.
  2. In a plate, mix coconut, groundnut powder, spices, jaggery and salt to make a stuffing.
  3. Stuff brinjals with above mixture.
  4. Heat oil in a pressure cooker.
  5. Fry onions.Add brinjals, kokum, remaining stuffing/mixture. Mix well and add 1\4 cup water.
  6. Mix gently and cook till 3 whistles on medium flame.
  7. When pressure releases, garnish with coriander leaves and serve with roti or dal-rice.
