ABOUT GuttiVankayaKura (Andhra stuffed Brinjal) RECIPE

Guttivankaya Kura is very popular Andhra dish. “Gutti vankaya” means “Baby Egg plant” . Guttivankayakura is delicious side dish to have with rice. These stuffed egg plant prepared using freshly grinded masala which is stuffed inside EggPlant.

Ingredients Serving: 4

  1. To fry
  2. Brinjal/Egg Plant - 6 no’s
  3. Oil - 3 Tbsp
  4. For Stuffing Powder
  5. Coriander seeds- 1 tbsp
  6. Urad Dhal- 1.5 Tbsp
  7. Chanadhal- 1.5 Tbsp
  8. Jeera - 1.5 tsp
  9. Red Chili - 4
  10. Garlic - 3 no’s
  11. Methi seeds - 1/4 tsp
  12. Curry leaves - few
  13. Oil - 2 Tsp (for Roasting)
  14. To Cook with EggPlant
  15. Tamarind - gooseberry size
  16. Water- 1/4 cup
  17. Salt - 2 tsp

Instructions

  1. To prepare stuffing powder heat a pan add 2 Tsp oil.Let it heat .
  2. Add Chanadhal roast well add urad Dhal roast well add all other ingredients under ‘For stuffing ‘.
  3. Switch off the flame and let it cool then grind into coarse powder in blender or mixer
  4. Wash the Brinjal and cut into four parts leaving stalk intact.
  5. Fry the Brinjal in 3 Tbsp in oil in medium flame, cook till Brinjal half cooked.
  6. In a bowl Mix the Stuffing powder with some water into thick paste.
  7. Stuff the Brinjal with masala paste.Keep the remaining stuffed masala aside.
  8. Soak the tamarind in water and extract juice.
  9. Heat a kadai , Add 1 Tbsp oil in Tawa roast the remaining stuffed powder sauté well.
  10. Then add the extracted tamarind juice mix well
  11. Add 1/2 Cup of water in the tawa and mix well when it started to boil add stuffed Brinjal
  12. Cook the Brinjal in tawa with stuffed powder & tamarind pulp
  13. Close the lid and turn the Brinjal every 4-5 minutes and close the lid again & cook well.
  14. Continue until Brinjal cooks soft & tender.
  15. Switch off the flame when Brinjal cooked softly.
  16. Andhra Stuffed Brinjal / Guttivankayakura Ready
