Pindi Chana is an authentic make from Punjabi cuisine made using white or brown chana and packed with flavors.

Ingredients Serving: 4

  1. 1 cup Brown chana
  2. 1 medium onion chopped
  3. 1 medium Tomato pureed
  4. 3 Green chillies slit
  5. 2 tbsp oil
  6. 2 nos cardamon pods
  7. 4 nos Cloves
  8. 1/2 tsp Shahi jeera
  9. An inch Cinnamon
  10. 1 nos Bay leaf
  11. An inch piece Ginger chopped
  12. 1 tsp Cumin powder
  13. 1 tbsp Coriander powder
  14. 1/2 tsp Aamchur powder
  15. 1 tsp Anardana powder
  16. 1/4 tsp Turmeric
  17. 1 tsp Garam masala powder
  18. 1/2tsp Red chili powder
  19. Salt to taste


  1. Soak the chana overnight and boil until soft in a pressure cooker and set ready.
  2. In a pan add oil. Once hot add in the shahi jeera and whole garam masala. Saute for a minute or two.
  3. Later add in the chopped onion and slit green chili. Saute until onion turns pinkish in color.
  4. Next stir in the chopped ginger and pureed tomato. Cook on low until oil starts to separate.
  5. Now stir in the cumin, coriander, red chili, Anardana, garam masala, amchur, turmeric powders, and salt. Saute for a minute or two until aromatic.
  6. Later add in the boiled chana along with its water and mix well until Incorporated.
  7. Cover and cook on high until thick. Masala should just coat the chana without any liquid as this is a semi dry curry.
  8. Turn off the heat garnish with julienne of ginger and lemon wedges.
  9. Spicy and bursting with flavors Pindi Chana ready to be savored.
