Ingredients Serving: 4

  1. Wheat flour 1 cup
  2. Eggs 3
  3. Banana 1/2 cup ( mashed)
  4. Powdered sugar 3/4 cup
  5. Blanched Chopped Almonds 1/4 Cup
  6. Grated Coconut 1/2 cup
  7. Baking Powder 1tsp
  8. Organic Cold pressed Virgin Coconut oil 3/4 Cup
  9. Vanilla essence 1 tsp
  10. Salt 1/4 tsp

Instructions

  1. Mix wheat flour and baking powder and salt by passing through a sieve.
  2. Add grated coconut, sugar, and coconut oil to it and mix well.
  3. Add blanched almonds and mashed Banana to it.
  4. Beat eggs well and add to the flour mixture. Add Vannila essence and mix.
  5. Preheat oven to 180 C. Grease the muffin pan and pour the batter into it.
  6. Bake for 25 minutes. This will make 10 muffins.
  7. Enjoy hot, this healthy muffins, in evening snacks.
