Banana Coconut Muffins

Ingredients to make Banana Coconut Muffins

  • 1 and 1/2 cups flour
  • 1 and 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup powdered sugar
  • 1 cup dessicated coconut
  • 2 ripe bananas mashed
  • 3 tsp warm milk
  • 3 eggs, at room temperature
  • 3/4 cup vegetable oil or butter
  • 1 tsp butterscotch or vanilla essence

How to make Banana Coconut Muffins

  1. Sieve the flour, baking powder and soda together. Keep it aside.
  2. Preheat the oven at 160 degrees celsius for 10 mins.
  3. In a bowl, mix the coconut and bananas together with milk for 5 mins. Let the coconut swell.
  4. In a separate bowl, add the powdered sugar and oil. Blend it on a high speed with a hand blender till its creamy. Add one egg at a time and the essence, beat it well till the eggs are aerated.
  5. Now add the banana coconut mixture and flour mixture. Incorporate it well with your hand and whisk gently till its all mixed well. Ensure that there are no flour spots.
  6. Line your cup cake trays with cup cake paper cups. Tip in 1 and 1/2 tbsp each of the cake mixture. Bake in the oven for 20-25 mins till its done. A knife inserted in should come out clean.
  7. Serve them warm.
