Ingredients to make Ridge Gourd (turai) Thogayal

  • Ridge gourd cut into pieces - 1 ( Remove the ridges but retain the skin )
  • Green chiles -2
  • coriander leaves - 2 tbs
  • curry leaves - 5-7
  • oil - 3 tbsp
  • Udad dal - 1 tsp
  • Channa dal - 1 tsp
  • Whole red chilies - 2 (optional ) you can increase green chilli
  • jeera - 1 tsp
  • garlic pieces - 2
  • For seasoning : Mustard seeds, udad dal, curry leaves

How to make Ridge Gourd (turai) Thogayal

  1. Fry dals, red chilli, jeera keep separately in a pan with a little oil. In the same pan add some more oil, add green chilli and pieces of turai fry till done then add coriander leaves, turmeric, salt and garlic.
  2. In a blender blend the dals and turai together to make a chutney.
  3. Take oil in a separate pan, add oil, mustard seeds, udad dal and curry leaves/. Fry for a second and pour over the chutney. Eat with rice, roti or as desired.
