ABOUT Zarda (sweet rice) RECIPE

This is traditional Persian dish which is now popular in all over India specially in Lucknow. I have made this little sweet and little tangy.

Ingredients Serving: 4

  1. Long Grain Rice - 1 Cup
  2. Sugar - 1 Cup
  3. Orange - 1, finely chopped
  4. Ghee - 50 gm
  5. Cashews - 8 to 10
  6. Raisins - 6 to 7
  7. Cardamom Powder - 1 teaspoon
  8. Saffron soaked in milk - 1 teaspoon
  9. Orange food colour - A pinch


  1. Add water, rice, food color, saffron in cooker and cook till one whistle. Turn the gas off and release pressure immediately, strain the rice in strainer.
  2. In same cooker add ghee and saute cashews and raisins for a while. Add 1/2cup water and sugar, orange and cardamom powder. Add rice and close the lid till one whistle.
  3. Zarda is done. Garnish with dry fruits and pomegranate pearls.
