ABOUT Apple Gourd with Dry Shrimps / Tinda Jawala RECIPE

Apple gourd / tinda / dhemse is traditionally made with tomato onion gravy or with stuffing masala. This recipie is a twist to traditional tinda recipe with the addition of dry shrimps. Shrimps give a distinct taste to this vegetable. Serve this curry with riceor bhakri to enhance the flavour.

Ingredients Serving: 2

  1. Tinda / apple gourd - 5-6 medium
  2. Onion - 1
  3. Jackfruit seeds, boiled - 5-6 (optional)
  4. Tomato puree - 1/2 Cup
  5. Vinegar / lemon juice - 1 teaspoon
  6. Dry shrimps - 1 Cup
  7. Dry coconut - 1 tablespoon
  8. Red chilli powder - 1 teaspoon
  9. Garam masala - 1/2 teaspoon
  10. Ghati / Malvani masala - 1 teaspoon
  11. Fresh coconut - 1 tablespoon
  12. Coriander for garnishing
  13. Salt to taste
  14. Oil for tempering
  15. Asafotida, cumin and mustard seeds for tempering

Instructions

  1. Wash and cut apple gourd and jackfruit seeds in pieces. Clean dry shrimps. Finely chop the onion.
  2. Heat oil in pan. Add tempering and shrimps and roast well. Add ginger garlic paste. Add apple gourd pieces. Add onion. Onion is added after apple gourd so as to retain its crunchy texture.
  3. Add masala, red chilli powder, dry coconut and mix well. Add tomato puree and vinegar and cook.
  4. Mix well and cook till apple gourd is fork tender. Add green coriander and grated coconut for garnishing.
  5. Mix well and serve.
