Chickpea & Sweet Potato Cakes

Ingredients to make Chickpea & Sweet Potato Cakes

  • 1 sweet potato
  • 1 cup boiled chickpeas
  • 1 tbsp cumin powder
  • 1 tbsp toasted sesame seeds
  • a pinch of oregano leaves
  • a pinch of cayenne pepper
  • a pinch of sea salt

How to make Chickpea & Sweet Potato Cakes

  1. Peel the sweet potato and bake in the oven until soft
  2. In a food processor, mix the chickpeas, boiled sweet potato, salt, cumin powder and cayenne pepper
  3. The mixture should be soft but dry enough to shape the cakes. When the mixture is ready, shape the dough into round and flat-shaped cakes.
  4. Sprinkle the cakes with toasted sesame seeds.
  5. Place the cakes in an oven tray for about 10 minutes. The outside should be toasted and the inside should be tender and soft.
  6. Add more sesame seeds if needed, as well as, some dry oregano for flavouring.
