Bhindi Butter Masala

Ingredients to make Bhindi Butter Masala

  • 250 gram - Ladyfinger
  • Oil for frying bhindi
  • 3 - Medium sized tomato cut into pieces
  • 2 - Medium sized onion cut into pieces
  • 8-10 - almond (soaked and peeled)
  • 2 tbsp - curd
  • 2 tbsp - Fresh cream
  • saffron strands 8-10 (soaked in 2 tbsp milk )
  • ginger chilli paste - 2 tsp
  • ginger - 1 inch piece
  • garlic clove crushed - 2
  • Whole spices : bay leaf -1
  • cloves - 2
  • cinnamon stick - 1 inch
  • star anise -1
  • butter - 2 tbsp
  • oil - 2 tbsp
  • turmeric powder - 2 tsp
  • Red chilli powder - 1 tsp
  • cumin seeds - 1 tsp
  • curry leaves - 1 sprig
  • salt to taste
  • Garam masala - 1/2 tsp
  • sugar - 1 tsp (optional)

How to make Bhindi Butter Masala

  1. Wash, wipe and cut the ladyfinger into pieces.
  2. In a pan add 1 cup of water, add tomatoes, all the whole spices, almonds and let it come to a boil.
  3. Cool, separate the whole spices from the water and make a smooth puree of remaining ingredients in a mixer. Keep aside.
  4. Now in a pan add oil, butter, cumin seeds and curry leaves.
  5. Add ginger chilli paste, onions and saute till onions turn pink.
  6. Add garlic and the tomato puree. Add turmeric, red chilli, salt and garam masala, cover with a lid and cook till oil separates.
  7. Now add cream and curd and cook for 1 or 2 minutes. Add Saffron, milk, sugar and mix well. Add fried bhindi and cook for a minute
  8. Switch off the flame. Garnish the dish with cream, butter and some almonds.
  9. Serve with roti, naan or rice.
