A beautiful delicious cake with the goodness of mango.

Ingredients Serving: 10

  1. Refined oil - 1 Cup
  2. Sugar - 1 Cup
  3. Eggs - 3
  4. Refined flour - 1 Cup
  5. Milk - 2 tablespoons
  6. Baking powder - 1 teaspoon
  7. Baking soda - 1 pinch
  8. Mango essence - A few drops
  9. Yellow color - A few drops
  10. Mango crush - 1/4 Cup
  11. Sugar syrup - 1 Cup
  12. Whipping cream - 400 ml
  13. Finely chopped ripe mango as per choice
  14. Mango flavor cold glaze - 150 gm

Instructions

  1. SeIve the flour with the baking powder and baking soda and set aside.
  2. Grind the sugar into a fine powder. Add oil to the sugar and mix well with an electric beater.
  3. Add eggs one by one and make an even mixture. To this add the flour mix.
  4. Fold in using the cut n fold method to a very smooth consistency.
  5. Add the mango crush and mix well. Add the milk and mix again.
  6. Transfer the mixture into a greased tin and bake for 45 minutes or till when pricked with a toothpick it comes out clean.
  7. Let it cool on rack to room temperature.
  8. Whip up the chilled whipping cream till stiff peaks appear.
  9. Slit the cooled cake into 2 or 3 layers. Place a layer in a plate and soak with sugar syrup. Spread the whipped cream over it and layer it with ripe mango cubes.
  10. Now cover with another layer of sponge cake and soak with sugar syrup, whipped cream and mango cubes. Keep layering like this.
  11. In the end cover the entire cake with cream very neatly. Dilute the mango cold glaze with water and pour it over the top of the cake. Allow the glaze to drizzle over the sides.
  12. If you want, pipe out whipped cream and decorate the sides to give a neat finish.
  13. Now let this chill in refrigerator for at least 2 to 3 hrs before you cut a slice
