Ingredients Serving: 6

  1. 1 cup all purpose flour
  2. 1 tbsp Besan
  3. 1 tsp corn flour
  4. 1/3 tsp baking powder
  5. Yellow colour (a drop)
  6. yoghurt 1/2 cup
  7. Alphonso mango puree 1/2 cup
  8. Oil or ghee 400 gms
  9. Sugar syrup :
  10. sugar 1 cup
  11. Water 1/2 cup
  12. Mango essence 1 tsp
  13. Saffron strands few

Instructions

  1. Mix flour , gram flour ,baking powder and yoghurt together to make a smooth batter.
  2. Keep aside, over night in a warm place to ferment.
  3. Next day make mango puree , strain it if needed.
  4. Mix it into the fermented flour mixture , see the consistency of the batter in the picture.
  5. Make the sugar syrup , by boiling the water and sugar ,add saffron and mango essence , boil until 1 string consistency is attained.
  6. Heat ample amount of oil or ghee in a small kadai.
  7. When the oil hot, pour the batter into the oil to form jalebis, with the help of jalebi bottle , forming the circles from outside to inside .
  8. Fry 2-3 at a time.
  9. When both sides turn, golden remove and soak in sugar syrup for 3-4 mins.
  10. Serve hot with rabri or as it is.
