Pasta Al Pesto

Ingredients to make Pasta Al Pesto

  • Spaghetti 1 pack
  • Extra virgin olive oil 1/2 cup
  • Fresh basil leaves (mostly available in big basket) 1 cup
  • Pine nuts, almonds or walnuts ( I added almonds) 6-7
  • salt as per taste
  • French beans 4-5 (cut into two)
  • potatoes 2 ( thinly sliced)

How to make Pasta Al Pesto

  1. Firstly, take a deep pan and fill water into 3/4 ths, add 2 that of olive oil and salt and boil till bubbles come up.
  2. Now add the spaghetti and boil till it is soft and completely cooled, though Italians pause cooking just before it's completely soft.
  3. Now boil the potatoes and French beans and keep them aside.
  4. For the pesto sauce, grind together basil leaves, garlic, nuts, salt and olive oil into a fine smooth paste.
  5. Now on a low flame, take a thick pan, add olive oil, cooked spaghetti, boiled potatoes and beans, and the finely ground pesto sauce and mix them well.
  6. Garnish the pasta with some toasted nuts, basil leaves and a generous pour of extra virgin olive oil.
  7. Voila... Pasta Al Pesto is ready to gobble...

My Tip:

Quantity of basil and garlic can be adjusted according to taste as they have a strong flavor.
