ABOUT Mango Rasmalai RECIPE

This is one of the summer delicacies. Mango is everyone's Favorite fruit. So here I am presenting sweet dish made from our favorite fruit mango.

Ingredients Serving: 8

  1. For paneer : 1 liter milk
  2. 1 tbsp lemon juice
  3. 1 liter water
  4. For mango rabdi : 6 cup milk
  5. 2 cup sweet mango puree
  6. 2 tbsp Sugar
  7. Some saffron thread

Instructions

  1. Method for paneer : Bring the milk to boil on gas. When it start boiling add lemon juice and mix well. Paneer and water gets separated after putting lemon juice.
  2. Put off the stove immediately otherwise paneer will become hard.
  3. Now put it in the sieves .wash the paneer in running water, so that the sourness of lemon gets off.
  4. Now tie the paneer in thin cloth and hang it.
  5. When all the water is drained out take out the paneer from the cloth, and put it on the plate.
  6. Now mash the paneer with your hand till it becomes soft. You can even use grinder to mash it properly.
  7. Now make lemon size small ball form mashed paneer and keep it aside.
  8. Now boil 1 liter water in separate vessel . Put all the paneer balls in this boiling water. Cover it and let it remain on the gas for 10 - 15 minutes.
  9. Now put off the gas and keep aside to cool it.
  10. Method for mango Rabadi : boil the 6 cup milk in heavy bottomed vessel. When milk start boiling sim the flame , stir continuously till the milk become thick. Put off the gas now and let it cool down.
  11. Now add mango puree and sugar in this cold milk and blend it properly.
  12. Now squeeze the paneer balls properly and add it in the above mango milk.
  13. Keep it in the fridge for sometime so that mango milk is properly absorbed by the paneer balls.
  14. Put some saffron strands on it and serve it chilled .
