ABOUT Tomato jam ! RECIPE

Tomato jam is delicious,versatile,spicy and has a perfect balance of sweetness. This serves as a great condiment to your morning toast. This Summer when tomatoes are in abundance try out this Tomato Jam. That is so good that I'll eat it with a spoon right out of the jar while waiting for my bread to toast.

Ingredients Serving: 10

  1. 500 gm : Tomato
  2. 1/3 to 1/2 cup : Demerara sugar
  3. 2 tbsp : Lemon/lime juice
  4. 1/2 tsp : Ginger Freshly grated
  5. 1 tsp : Red chilli flakes
  6. 1/4 tsp : salt
  7. 1/8 tsp : Cinnamon powder
  8. 1/4 tsp : Cumin powder

Instructions

  1. Prepare the tomatoes : Using a sharp knife, cut a shallow X on the bottom of each tomato. Bring water to a roaring boil add the tomatoes and turn off the heat. Cover with a lid for couple of minutes.
  2. Later drain the water and cool tomatoes a bit. Peel the skin of blanched tomatoes, de seed as much as you can and then chop into fine pieces.
  3. Combine tomatoes, sugar, lemon juice, ginger, red chilli flakes, salt, cinnamon, and cumin in a large, heavy-bottomed pot and bring to a boil over medium-high heat, stirring frequently. Reduce heat and simmer until the mixture reaches a thick, jam like consistency, about half hour.
  4. Cool the jam to room temperature and ladle into sterilised jars.
  5. Tasty ,spicy,sweet condiment to the morning toast.
