ABOUT Navratna Pulao RECIPE

A complete vegetarian nawabs dish. It contains various kinds of colors and flavors.Because this dish contains 9 jewels in it and hence the name.And the jewels in the dish are 4 kinds of veggies,2 kinds of dry fruits,2 kind of fresh fruits This is a quite sweet dish.Here I’m adding some more innovation to it.

Ingredients Serving: 2

  1. Cooked basmati rice- 2 cups;
  2. Gee- 2 tbsp
  3. Oil- 2 tbsp
  4. Salt- as per taste
  5. Sugar- 3 tbsp (as per your taste)
  6. Whole garam masala- 1-inch cinnamon stick,2-3 cardamom,2 cloves,1 bay leaf
  7. Nutmeg Powder- half a tsp
  8. Cinnamon powder – 1 pinch
  9. Carrot (chopped)- half cup
  10. Cauliflower (chopped)- half cup
  11. Potato (boiled & chopped)- half cup
  12. Green Capsicum (chopped)- half cup
  13. Apple (chopped)- half cup
  14. Pomegranate seed - half cup
  15. Raisin – 2 tbsp
  16. Cashew- 3 tbsp
  17. Paneer – 100 gm
  18. Hung curd- 2 Tbsp
  19. Cumin Powder- 1 tsp
  20. Red Chili powder - 1 tsp
  21. Turmeric powder - 1 tsp
  22. Garam Masala Powder - 1 tsp
  23. Lemon Juice – 2 tbsp

Instructions

  1. Take a mixing bowl add Hung curd, then add half tsp of each masala-cumin powder, red chili powder, turmeric powder & garam masala, then add salt and sugar powder 1tsp each.mix them very nicely add the paneer to it & rest the mixture for 15min
  2. In an another mixing bowl again add half tsp of each masala - cumin Powder, red chili powder , turmeric powder , & garam masala, then add salt and sugar powder 1 tsp each,
  3. Then add cornflower & mix it nicely add the potato coat them then keep into the refrigerator for 15 mins.
  4. Meanwhile, heat up a pan, then add oil to it wait for a min.
  5. Then add a green cardamom to it wait a min, when the oil gets nicely flavored remove it.
  6. Fry cashew and raisin, then remove it from the pan and keep it aside.(do not over fry)
  7. Then on the same pan fry carrot, cauliflower, capsicum with a pinch of salt. keep it aside,
  8. Then fry the refrigerated potato, keep it aside
  9. Then fry the marinated paneer, keep it aside.
  10. Cut the fruit, with a pinch of black salt and cinnamon powder, mix them, and keep them aside.
  11. Now on a fresh pan add ghee & whole garam masala, allow them to crackle.
  12. Now add the rice, sugar, salt wait for a min,
  13. Then add all other ingredients & mix them very gently.
  14. Test the seasoning, add salt or sugar if required, the add nutmeg powder.
  15. Now cover it, & cook for another 5 min.
  16. Then spread a tsp of ghee over it and serve it.
