ABOUT Wholewheat galette with Caramelized onions RECIPE

A simple recipe that gives some immense flavors and aroma. This caramelized onion galette has a flaky crust with a cheezy and caramelized onion filling. The sweetness from the onions is well balanced by the other flavors added.

Ingredients Serving: 4

  1. For the crust:
  2. Wholewheat flour 3/4 cup
  3. All purpose flour 1/4 cup
  4. Cold butter 1/2 cup
  5. Ice cold water 1/4 cup
  6. Vinegar 1 tbsp
  7. Salt 1 tsp
  8. For the caramelized onion filling:
  9. Medium sized onions 4 (equally sliced)
  10. Garlic 1 clove (sliced)
  11. Butter 2 tbsp
  12. Any vegetable oil 1 tbsp
  13. Salt as required
  14. black pepper powder 1 tsp
  15. Dried oregano powder 1 tsp
  16. Mozzarella cheese 1/3 cup (grated)
  17. Egg or milk (optional, for the glaze)
  18. White sesame seeds 1/2 tsp

Instructions

  1. Mix the wholewheat flour, all purpose flour and salt in a bowl.
  2. Then add the cold butter cubes and rub with clean fingers so that mixture forms small crumbs.
  3. Then add the ice cold water slowly and start mixing.
  4. Add the vinegar too.
  5. Knead for about 5 minutes to form a soft dough.
  6. Cover with a cling film and refrigerate for at least 2 hours.
  7. Meanwhile prepare the caramelized onion filling.
  8. For this, melt butter in a pan with oil.
  9. Add the sliced onions and garlic and saute in medium flame.
  10. To avoid burning the onions, stir in between, but not very frequently.
  11. Wait until the onions turn into a lovely golden brown color. This may take around 25 minutes.
  12. When almost done, add salt, pepper powder and oregano and mix.
  13. Switch the flame off and transfer the caramelized onions to another dish.
  14. Take the prepared dough outside and allow to rest at room temperature for about 15-20 minutes.
  15. Then spread the dough using clean fingers to form a rough circle.
  16. Transfer this base to a greased and lined baking tray.
  17. Spread the mozzarella cheese on the base, leaving about 1 inch from the edge.
  18. Next add the caramelized onions on top of the cheese layer. Spread evenly.
  19. Now fold the edges towards inside by folding and pinching.
  20. Give an egg wash or brush with milk for the glaze.
  21. Sprinkle white sesame seeds on tip.
  22. Preheat the oven to 180 degree centigrade.
  23. And bake for 30 minutes.
  24. Serve hot.
