sheer korma recipe - is my favourite this north Indian sweet dessert and a rich sweet dessert made with vermicelli, milk, dates, dry fruits and ghee.this sweet is specially eid.

Ingredients Serving: 10

  1. 500 ml milk OR 2 cups full fat organic milk
  2. 1tsp. Ghee
  3. 1 to 1.5 tablespoon sugar or as required (the dates and raisins add a lot of sweetness to the milk, so add sugar accordingly.)
  4. 4 green cardamoms (choti elaichi) - crushed to a powder in a mortar-pestle.
  5. ½ cup broken seviyan (whole wheat vermicelli)
  6. 8-9 Almonds chopped
  7. 8-9 Keshiwe chopped
  8. 8-9 pista finally chopped
  9. 8-9 Dates sheedless chopped
  10. 1tsp. Chironji
  11. 1tsp. Kissmish
  12. 1tsp rose water

Instructions

  1. roast the seviyan till golden and keep aside. if you want then you can roast the seviyan in ghee also.
  2. in the same pan. heat ghee and add chopped dry fruits and saute for 3-4 minutes stirring often.
  3. heat milk in a saucepan and let it come to a boil. lower the flame and simmer for 8-10 minutes till the milk slightly thickens.
  4. add the roasted seviyan and sugar to the milk and simmer till the seviyan are cooked and have become soft for about 8-10 minutes on a low flame.
  5. the milk will also thicken and reduce in volume. add the whole dry fruit mixture and cardamom powder. switch off the fire and stir.
  6. taste the sheer kurma and add more sugar if required. serve the sheer khurma hot, warm or chilled.
  7. you can also garnish sheer khurma with saffron strands or rose petals or dry fruits or powdered cardamom
