It is very popular and authentically serverd in valsad and navsari highway.A seasonal dish is basically served in winter. Zero oil recipe and authenticaly prepared in matka. Cooked by extenal heating

Ingredients Serving: 4

  1. 2 small sweetpotatoes( roundly cut)
  2. 10-12 baby potatoes
  3. 300 gm surati fresh green papdi
  4. 200 gm yam/kan/ratalu(cut in medium size)
  5. 1 greated ginger(optional)
  6. 7-8 green chili
  7. Pinch of turmenric powder
  8. 2-3 tsp Black paper
  9. 1 tsp Jira powder
  10. 1 tsp Dhana jira powder
  11. 1 tsp Lemon juice
  12. 2 tbsp Oil
  13. 1/4 tsp fennal seeds
  14. Salt to taste


  1. Take all the masala in one jar crushed it and prepare a paste.
  2. Wash all the veg.with access of water with its peel.
  3. Potato cuts in two part, kan and sweet potatoes in rounded piece and apply paste in all the vegitables.. and merinated all the vegies with masala's for 1-2 hr.
  4. Arrange all the vegetable in bowl and coverd it with cotton cloths.
  5. For making umbadiyu in steam take any steamer or use any big utensils which that bowl can be placed. Take 2 cup of water in big utensil and placed it in flame for heating Place wired stand in it for keeping bowl on it.
  6. Now arrange bowl veg. bowl cook it on full flame for 5-10 minute on slow flame. You can cook it for 5 min more if u fill it is still uncooked.
  7. Serve hot with fresh garlic -coriander leaves and green chilli chutney.
  8. So surati special umbadiyu are ready to serve.
