Healthy Rocks

Ingredients to make Healthy Rocks

  • Roasted almonds – 18-19 (Roughly Chopped)
  • raisins – 1/4th cup
  • Roasted peanuts – 1/4th cup
  • Roasted Watermelon seeds or Magaj – 1/4th cup
  • Caramel– 2 tablespoon
  • White Milk chocolate - 150grams
  • Garnish - Grated white chocolate

How to make Healthy Rocks

  1. Chop white chocolate and melt it in a double boiler or in microwave for 1 minute. If using microwave keep checking after every 10 seconds. Keep stirring after each cooking interval. Do this till chocolate melts completely.
  2. In a bowl, mix roasted and chopped almonds, raisins, watermelon seeds and peanuts.
  3. Take a cookie sheet and line it with parchment paper or butter paper. Arrange some dry fruit mixture into clusters. Leave some space in between them.
  4. Drizzle 1 teaspoon of caramel over each cluster. Make sure that caramel is touching all of the nuts in cluster.
  5. Take remaining nuts mixture and mix into the white chocolate mixture. Fold gently.
  6. Spoon a 1-2 tbsp mixture over the top of the caramel and nuts. Spread it around along the top making it look like a rock cluster.
  7. Allow the rocks to set up or freeze it for 10-15 minutes.
  8. Serve them or transfer the white chocolate rocks into the air tight container.

My Tip:

Caramel is optional.
