Ingredients Serving: 10

  1. All purpose flour - 2 cups
  2. Baking soda - 1.25 teaspoon
  3. Salt - 1/4th teaspoon
  4. Unsalted butter (softened) - 3/4 th cup
  5. White sugar - 2/3rd cup
  6. Brown sugar - 2/3rd cup
  7. Egg - 1
  8. Egg yolk - 1
  9. Vanilla extract - 1.5 teaspoon
  10. Gems - 1 cup

Instructions

  1. Sieve the flour, baking soda and salt together in a bowl, keep aside.
  2. Now in a separate mixing bowl, whisk the butter and sugars together until they are fluffy.
  3. Add the egg and the egg yolk while whisking the butter mix. Pour in the vanilla extract as well and give it a mix.
  4. Scrape the sides of the butter mix and now gradually add the flour mix into it.
  5. This will form a dough and refrigerate for 60 minutes or until firm.
  6. Now line a baking tray with a butter paper and using an ice cream scoop, scoop out the cookie dough onto the tray.
  7. Dab the dough and flatten it. Now arrange the gems closely to each other on each of the flattened cookie dough.
  8. Bake them in a preheated oven at 177 degree celsius for 16-17 minutes or until the sides of the cookies are golden brown.
  9. Cool and serve the cookies.
