My kids are big fan of gems so baked these gems cookies with whole wheat flour as a return gift for my kids birthday . Everyone loved it too much.

Ingredients Serving: 10

  1. 2 Cup Whole wheat flour
  2. 1 1/4 tsp baking soda
  3. 1/4 tsp Salt
  4. 3/4 cup powder sugar
  5. 3/4 cup Butter, at room temp
  6. 1 1/2 tbsp Flaxseed powder
  7. 1 tsp vanilla extract
  8. 1 cup gems

Instructions

  1. Sieve flour , salt and baking soda together.
  2. Add 4 tbsp of warm water to flaxseed powder and keep aside for 10 minutes. It will turn in gel form .
  3. In a separate bowl, mix butter and sugar till butter gets light in colour and fluffy.
  4. Add flaxseed gel and vanilla extract to it and mix well.
  5. Now add flour and make dough.
  6. Do not knead much.
  7. Cover the dough in cling wrap and chill for 10-15 minutes in fridge.
  8. Now preheat oven at 180°C.
  9. Take small balls out of dough and flatten it a bit. Arrange gems on it side by side and place on a cookie sheet or baking tray.
  10. Keep 1-2 inch gap between two Cookies as these expand during baking.
  11. Similarly shape all cookies and bake for 15-20 minutes. Time vary according to different ovens.
  12. Keep an eye after 15 minutes. When Cookies start getting golden from edges ,remove from oven and let it rest on tray for 5-7 minutes.
  13. Then transfer on a wire rack to cool completely.
  14. Let your kids enjoy these crispy ,crunchy , colourful delicious cookies with a glass of milk .
