ABOUT Roti Telur RECIPE

This is the eggy brother of Roti Canai, this Malaysian specialty is served around the clock on the streets of Kuala Lumpur. Stuffed with egg, this flaky delicious flat bread is absolutely delicious

Ingredients Serving: 4

  1. 2 cups all purpose flour
  2. 1/4 tsp salt
  3. 1/2 cup ghee
  4. 1/2 cup water
  5. 1 onion chopped
  6. 2 tsp coriander chopped
  7. 2 green chillies finely chopped
  8. 4 eggs
  9. Salt and pepper to taste

Instructions

  1. In a bowl sift flour and salt. Mix in the ghee and then using the water knead into a smooth dough. Let this rest for 2 to 3 hours to soften.
  2. Pinch out a piece of dough and oil the work surface with a bit of ghee as well. Roll out the dough as thin as possible. Fold and roll again. Repeat this proceess 4 to 5 times.
  3. After the final fold, roll out as thin as possible as well. Heat a flat pan and add the dough to it. Immediately break one egg and spread in the centre of the roti.
  4. Add onions, green chilli and coriander to this along with the salt and pepper and start folding the roti from all four sides to resemble an envelope.
  5. Make sure the edges on top are sealed and then flip over to cook on the other side for 3 to 4 minutes.
  6. Cut into two and serve hot.
