Nihari Gosht

Ingredients to make Nihari Gosht

  • Mutton- 600gms
  • mustard oil- 120ml
  • Thin sliced onions-1 medium
  • Browned onions-5gms
  • Crushed ginger- 20gms
  • Crushed garlic- 6 cloves
  • Crushed green chilli- 1
  • Crushed coriander root-50 gms
  • salt to taste
  • turmeric powder- 1tsp
  • Yellow chilli powder- 1tsp
  • Red chilli powder-1 tsp
  • Step-2
  • curd- 50 gms
  • Potli masala- 1
  • Stock-1 lt
  • Dough- 150 gms
  • Step-3
  • Soaked gond(edible gum extract)-1 tbsp
  • Roux- 1 tsp
  • Nehari masala-1 tbsp
  • Milk- 60 ml
  • saffron-few strands
  • Attar-1 drop
  • Step-4
  • Brown onion- 1 tsp
  • ginger juliennes- 1 tsp
  • Green chilli juliennes- 1 tsp
  • lemon wedges-1 nos

How to make Nihari Gosht

  1. Step 1- Put mustard oil in a pot and heat to the smoking point,let it cool.Add mutton,salt,slice onion, brown onion,crushed ginger,garlic and coriander root.
  2. Cover with the lid and simmer it for 20 min.Add turmeric powder,yellow chili powder and red chili powder.Let it cook for another 5 min.
  3. Step 2-Remove mutton from the fire, open the lid,add curd, mix well then add potli masala along with stock. Now, take dough and seal the pot. Put it back on the fire,simmer it for 1 hour.
  4. Step 3-Open the lid,remove the mutton pieces and stain the gravy.Mix mutton pieces and gravy together in the another pot and put it back on the fire.
  5. Then add roux, soaked gond( gum extract),nihari masala,milk and saffron. Cook nicely upto a thick consistency.Now add sweet attar to the nihari.
  6. Step 4-Take a serving plate, put cooked nihari meat on it and garnish with browned onion,ginger juliennes,green chillies juiliennes and lemon wedges on top and serve hot.
