ABOUT Egyptian Koshari RECIPE

This is a recipe from Egypt i.e. Mediterranean cuisine and this is regarded as the national dish of Egypt.It is available in every restaurant in Egypt and local vendors also sell koshari like v get golgappe here. KOSHARI is derived from Indian word khicri and this dish can be called as videshi khichri.It makes a complete wholesome meal.

Ingredients Serving: 4

  1. For Masala:-
  2. 1 tsp cumin seeds
  3. 4-5 green cardamom pods
  4. 1 tbsp coriander Seeds
  5. 1 piece of cinnamon
  6. 1 tsp cloves
  7. 1 tbsp black pepper corns
  8. 1/4 tsp nutmeg
  9. For Rice:-
  10. 1 cup rice
  11. 1 tsp cumin seeds
  12. 2 big onions grated length wise
  13. 2-3 bayleaves
  14. 2 tbsp oil
  15. For sauce:-
  16. 1 cup tomato puree
  17. 1 onion chopped
  18. 1 tbsp vinegar
  19. 1 green chili chopped
  20. 1 tbsp oil
  21. For assembling:-
  22. 1 cup whole red lentils boiled
  23. 1 cup chickpeas boiled
  24. 1 cup macroni/pasta boiled
  25. salt to taste in every step

Instructions

  1. Dry roast everything for masala separately and make a fine powder.Keep aside .
  2. Take oil in a wok. Fry onions till crisp like birista which we make for biryani.
  3. Remove in a bowl.
  4. In the same wok add cumin seeds and bayleaves. Add soaked rice,water and salt.Cook till rice are done .
  5. Keep the rice aside .
  6. For sauce,heat oil in a pan.
  7. Add onions and roast. Add tomato puree and roast.
  8. Add salt and masala we prepared in step 1 according to your taste. Add red chilli powder for more spice.
  9. Now for assembling KOSHARI, mix red lentils and macaroni with cooked rice.
  10. Take this mixture in a plate and top with the sauce we prepared.
  11. Sprinkle masala that we already prepared in step 1 .
  12. Finally garnish with boiled chickpeas and fried onions.
  13. Relish the Mediterranean delicacy at your home.
