Ingredients Serving: 4

  1. For sambhar
  2. Tuar lentil 1 cup
  3. Mix chopped vegetables ( beans, carrots,bottle guard, pumpkin, brinjal​)
  4. turmeric powder 1tea spoon
  5. salt to taste
  6. For instant sambhar masala
  7. Gram Flour 1 table spoon
  8. Roasted cumin seeds powder 1tsp
  9. Asefotidia 1-2 tea spoon
  10. fenugreek roasted powder 1tea spoon
  11. Pepprika powder 2tea spoon
  12. Blackpaper 1tea spoon
  13. turmeric powder 1tea spoon
  14. coriander powder 2-3tea spoon
  15. coconut powder 2 table spoon
  16. tamarind pulp 1/4cup
  17. For tempering
  18. ghee 2 table spoon
  19. Whole red chillies 4-5
  20. Mustard seeds 1table spoon
  21. Curry leaves 15-20
  22. Asafoetida 1 tea spoon
  23. Pepprika powder 1tea spoon
  24. Fenugreek seeds 1 tea spoon (optional)
  25. Medium size tomatoes Chopped 2
  26. For idlies batter
  27. For white portion.......
  28. Urad lentil 1/8cup
  29. rice 1/4cup
  30. curd 1/2cup
  31. salt to taste
  32. For yellow portion......
  33. Gram flour 1/4cup
  34. semolina 1/4cup
  35. Turmeric powder 1 tea spoon
  36. salt to taste
  37. curd 1/2cup
  38. For purple portion....
  39. semolina 1/2cup
  40. Beetroot pulp 1/4cup
  41. curd 1/2
  42. salt to taste
  43. For green portion.....
  44. Moong lentil 1/4cup
  45. rice 1/4cup
  46. curd 1/2cup
  47. salt to taste
  48. Eno 2 packs
  49. For instant coconut chuteny
  50. Desiccated coconut 1/2cup
  51. Green chillies 4
  52. Bikaneri bhujiya 1/4cup
  53. curd 1/2 cup
  54. salt to taste
  55. For tempering
  56. oil 1table spoon
  57. Mustard seeds 2 tea spoon
  58. Curry leaves 8-10

Instructions

  1. Take tuar lentils, vegetables, turmeric and salt add water and boil it.
  2. Take sambhar masala and roast it then add it to the sambhar.
  3. Take tamarind pulp and add some water and then add it to the sambhar.
  4. Take ghee in a wok and add whole red chillies, mustard seeds, curry leaves, asefotidia, paprika, fenugreek seeds and roast them then add to the sambhar. It's ready!!
  5. For the white portion take Urad lentils and rice and soak them for 3 hours. Take them and grind it then add curd and salt then keep in a warm place. Before making add Eno.
  6. For yellow portion take all the ingredients and keep aside for sometime .Before making add Eno.
  7. For purple portion take all the ingredients and keep aside for sometime .Before making add Eno.
  8. For the green portion take Moong lentils and rice and soak them for 3 hours. Take them and grind it then add curd and salt then keep in a warm place. Before making add Eno.
  9. Take idli mould and grease it. Take water in the idli stand and keep on medium flame.
  10. Divide the mould into 4 parts with the help of toothpick. Pour the different colored batters one by one in the divided portions.
  11. Then take out the toothpicks and put it in the idli stand. Steam for sometime then take a toothpick and insert it in one of the idlies if it comes out clean then it's ready and if not cook for some more time. Idli ready!!
  12. For coconut chutney take all the ingredients and grind them then take it out in a bowl then temper it.
  13. Designer Idli Sambhar ready!!
