ABOUT Eggless Lamingtons RECIPE

Lamingtons is an Australian dessert where plain vanilla sponge cake are cut into cubes or squares, dipped in chocolate sauce and coated in dessicated coconut. A great party dessert, soft, spongy and melt in the mouth dessert.

Ingredients Serving: 6

  1. All Purpose Flour - 1 cup 
  2. Curd - ¼ cup 
  3. Sugar - ½ cup
  4. Oil - ¼ cup 
  5. Baking powder - ½ tsp 
  6. Baking Soda - ½ tsp 
  7. Vanilla essence - 1 tsp 
  8. Milk - ¼ cup 
  9. Dessicated coconut - 1 cup
  10. For Chocolate Sauce:
  11. Confectioners sugar - 1 cup
  12. Cocoa powder - ½ cup
  13. Chocolate - ¼ cup melted 
  14. Water - 2-3 tbsp 
  15. Butter - 1 tbsp 

Instructions

  1. In a mixing bowl take the curd and the baking soda, stir and mix them. Keep side for 5-10 mins. 
  2. Add the sugar, oil, vanilla essence, milk to the curd mixture and mix well together. 
  3. Seive in the flour and baking powder and gently fold them and make a smooth batter. 
  4. Grease a cake pan and preheat oven @180° for 10 mins. 
  5. Pour the batter into the greased pan and bake for 35 mins. A tooth pick inserted should come out clean. 
  6. To make the chocolate sauce, in a sauce pan add the chocolate and water and heat it till the water comes to a boil. Take off the heat. Add the confectioners sugar, butter and cocoa powder, stir and mix well. Chocolate sauce is ready. 
  7. In a plate spread the dessicated coconut. 
  8. Remove the cake from the oven and let it cool down completely. Invert and cut them into cubes. 
  9. Take the cake cubes, dip them in the chocolate sauce nicely and coat them in the dessicated coconut and your eggless Lamingtons are ready to be served.
