It is a very healthy recipe. Easy to make .it is a party recipe too.

Ingredients Serving: 4

  1. 1/2 cup corn
  2. 1/2 cup Boiled Rajma
  3. 1 Tbsp Minced Carrot
  4. 1 Tbsp Minced Capsicum
  5. 1 chopped onion
  6. 1 tbsp chopped garlic
  7. 2 Chopped Green chillies
  8. 1 tbsp lemon juice
  9. 1 cup long grain basmati rice
  10. 1/2 tsp jeera
  11. 2 star anise
  12. 1 tbsp chopped mint leaves
  13. 1/2 tsp turmeric powder
  14. 1/2 tsp chilli powder
  15. 1/2 tsp sugar
  16. Salt to taste
  17. 1 tbsp oil
  18. 1 Tbsp Extra virgin olive oil to garnish

Instructions

  1. Wash and drain Basmati rice and keep aside.
  2. Heat a pan and add oil to it.
  3. Add jeera , star anise. Then add the garlic , green chilli and mint leaves.
  4. Add chopped carrots, capsicum, corn and rajma . Fry all together and then add rice.
  5. Add water. Cover the pan and let it cook.
  6. Add lime juice , sugar and salt . Mix well.
  7. Add extra virgin olive oil for garnishing.
  8. Serve hot
