ABOUT No Cheese Vege Moussaka. ( Indian version of Greek cuisine) RECIPE

Moussaka is a baked dish consisting of layers of sauted eggplant and meat( lamb) flavored with sauted Onions, Tomatoes and covered with milk based sauce. With Cheese. Here I have used different vegetables like Carrot, Bottle gourd, Potato and Beetroot. I have substituted Paneer for Cheese.

Ingredients Serving: 4

  1. Brinjal 3 ( about 300 grms)
  2. Potato 2 big ( 250 grms)
  3. Carrots 3
  4. Bottle Gourd 250 grms
  5. Beetroot 1( 150 grms)
  6. Salt 2 tsp
  7. Pepper powder 2 tsp
  8. Apple cider vinegar 1 tbsp / lime juice 2 tbsp
  9. Butter 3 tbsp
  10. Onion chopped 1 3
  11. Tomato chopped 3
  12. Garlic crushed 1 tsp
  13. Coriander leaves finely chopped 2 tbsp
  14. Olive oil 1 tbsp
  15. Cinnamon powder 1 tsp
  16. Oil for Deep frying
  17. For White Sauce
  18. Milk 1 litre
  19. Wheat flour 4 tbsp
  20. Butter / Clarified butter 3 to 4 tbsp
  21. Garlic crushed 1 tsp
  22. Pepper powder 1 tsp
  23. Paneer grated 200 grms

Instructions

  1. Chop Brinjals in circles.
  2. Peel and chop Bottle gourd in circles.
  3. Same way chop Carrots and Beetroot( after peeling) in circles
  4. Spread salt over all chopped vegetables and keep aside for 10 minutes.
  5. Now heat oil in a pan and fry all vegetables till brown.
  6. Spread pepper over it.
  7. Now heat olive oil in a pan. Add chopped onions, saute, add crushed garlic.
  8. Saute for 2 minutes. Add Apple cider vinegar. Boil for 2 minutes. Adjust salt.
  9. Now preheat oven at 200 C.
  10. Till that heat Butter / Clarified butter in a pan. Add flour, stir till get little brown.
  11. Add hot milk to it. Let the sauce boil. Add salt and pepper to taste.
  12. Add crushed garlic and turn off the gas. Add chopped Coriander leaves.
  13. Grease a baking tray. Add half the white sauce in it.
  14. Now arrange half sauted vegetables over the white sauce in baking tray. Spread melted butter.
  15. Spread Tomato based sauce over it.
  16. Arrange other half and layer with white sauce.
  17. Bake in a preheated oven for 40 to 45 minutes. Adjust the temperature according to your oven.
  18. Serve warm with your favorite cold drink.
  19. You can have garlic bread as an accompany.
