Ingredients Serving: 4

  1. Potatoes 2 Medium size
  2. Carrot 1/2
  3. Capsicum 1/2
  4. Onion 1 small
  5. Paneer 8 pieces
  6. Mushroom 4-5
  7. Dry herbs 1 /4 tsp
  8. Pepper powder 1/4 tsp
  9. salt as per taste
  10. Cheese 3 tbsp
  11. Butter 1-2 tbsp

Instructions

  1. Boil potatoes in pressure cooker for 1 whistle
  2. Chop onion and capsicum , mushrooms
  3. Grate carrot
  4. Crush garlic
  5. Grate paneer
  6. Cut potatoes in lengthwise
  7. Scoop out the the potatoes and give them boat shape
  8. Cut cheese in small pieces
  9. Brush some butter inside , as well as outside the potato boats
  10. Now microwave in high power the potato boats for 8 minutes or until crispy
  11. Heat 2 tbsp oil in a nonstick pan, add chopped onion, crushed garlic
  12. When onion is translucent add chopped mushrooms
  13. Add capsicum and carrot
  14. Add grated paneer and scooped potato, mix together
  15. Add salt
  16. Add black pepper powder
  17. Add mixed herbs
  18. Mix all the ingredients in medium heat for 5-6 minutes
  19. Now add this stuffing to the potato boats
  20. Now add the cheese
  21. Next microwave for 2 minutes in high heat or until cheese melts
  22. They are ready now, serve hot with juice as starters
