Ingredients Serving: 4

  1. Rice fine sona masoori-2 cups
  2. Onion sliced -2 numbers
  3. Whole spices-
  4. Shah jeera-1 tablespoon
  5. Black pepper corn 6-7 numbers
  6. Cinnamon stick-1 inch
  7. Green cardamom -2 numbers
  8. Bay leaf 2 numbers
  9. Green chillies - 4 numbers
  10. Vegetables in pulav-
  11. Green frozen peas -1/2 cup
  12. Beans -1/2 cup cut into small pieces
  13. Carrot- 1/4 cup cut into small pieces
  14. Cauliflower - 3 big florets cut into 4 pieces
  15. Soya nuggets -1 cup
  16. for garnishing-
  17. Paneer 200 gram cut into cubes
  18. Golden raisins 3 tablespoon
  19. Cashew 3 tablespoon
  20. Almonds 8-10 numbers
  21. Powder spices-
  22. Coriander powder 1 teaspoon
  23. Green chilli and ginger paste- 1tablespoon
  24. Cumin powder 1/2 teaspoon
  25. Garam masala powder 1teaspoon
  26. cardamom powder 1/4 teaspoon
  27. Salt to taste
  28. Sugar 1teaspoon
  29. Curd 1/2 cup
  30. Milk 1/2 cup
  31. Coriander leaves chopped 3tablespoon
  32. Mint leaves 2 tablespoon
  33. Oil 2 tablespoon
  34. Butter 4 tablespoon

Instructions

  1. Wash rice 3-4 times with water then soak them in water for 1/2 hr.
  2. Wash soya nuggets and soak them in little water for 5 minutes and squeeze out all the excess water.
  3. Heat oil and 3 tbsp butter in a heavy base cooker add sliced onions and fry them to light golden brown. -
  4. take out some fried onion for garnishing and keep it aside
  5. in a same cooker add whole spices and fry them till nice aroma starts coming.
  6. add all the cut vegetables, soya nuggets and fry them for a while
  7. add all the powder spices and fry until raw smell of spices disappears.
  8. add ginger and green chilli paste and fry for 1 minutes.
  9. Add hung curd / curd and fry for 2 minutes. -add chopped coriander and mint leaves.
  10. add soaked rice and mix all the ingredients with the help of spatula
  11. add 4 cups of hot water. -add salt to taste. -add sugar.
  12. cover the lid of a cooker and cook on high Flame until 1 whistle comes and switch of the flame.
  13. let the cooker rest until all the steam comes out its own.
  14. meanwhile take a pan add 1tbsp butter and fry salted paneer cubes to light golden brown take out in a plate.
  15. now in a same pan fry all the dry fruits for 30 seconds or till light golden color
  16. after all the steam comes out from cooker open the lid and mix all the fried dry fruits,fried onions and paneer cubes keep some for Garnishing.
  17. serve hot with your choice of curd Raita or coriander mint chutney.
