ABOUT Vegetable Dum Biryani ! RECIPE

Being an Hyderabadi, Biryani has always played a key role.No matter where we go, whom ever we meet,people always talk about Dum Biryani and irony of life is that,I never tasted it as we are vegetarians.Biryani has endless versions and methods of cooking. It has no fixed recipe.Flaky rice flavoured with paneer,vegetables,aromatic spices, powders and much more. Today I'm here sharing this vegetable Dum Biryani with you all that is close to my heart for all possible reasons one of which is that,its My Mom's recipe.

Ingredients Serving: 4

  1. For Rice : 2 cups : Basmati rice
  2. 5 to 6 cups : Water
  3. 1 no : Black cardamom
  4. 2 no : Cloves
  5. An inch : Cinnamon stick
  6. 1 no : Bay leaf
  7. 1/2 tsp : Caraway seeds(shahi jeera)
  8. 1 tsp : Lemon juice
  9. 1/2 tsp : Salt
  10. For vegetable layer : 2 cups : Mixed vegetables
  11. 1/4 cup : Bell pepper diced
  12. 1/2 cup : Paneer cubes
  13. 1/4 cup : onions finely sliced
  14. 1 small : Tomato diced
  15. 3 no : Green chilliest slit lengthwise
  16. 1/4 cup : Mint finely chopped
  17. 1/4 cup : Coriander finely chopped
  18. 1/2 cup : Brown/ fried Onions
  19. 1 tbsp : Ginger garlic paste
  20. 1 tsp : Cumin powder
  21. 1 tbsp : Coriander powder
  22. 1 tsp : Garam masala powder
  23. 1 tbsp : Biryani masala
  24. 1/2 tsp : Sugar
  25. 1/2 tsp : Red chilli powder
  26. Salt to taste
  27. 3 tbsp : Thick yogurt
  28. 2 tsp : Gram flour
  29. 2 tbsp : Ghee / Clarified butter
  30. 2 tbsp : oil
  31. 2 tbsp : Milk
  32. Pinch of saffron strands
  33. 2 tbsp : Roasted cashews

Instructions

  1. Wash and soak the Basmati rice in enough water for 15 minutes. In a small cloth take the whole Garam masala and tie its corners resembling a potli.
  2. Peel and Cut the vegetables of choice into chunks. Here I used Potato, carrot, cauliflower, French beans , bell peppers and peas. Cube the paneer as well.
  3. In a small bowl take warm milk and add saffron strands to it. Set it aside until needed.
  4. Marination : In a bowl take yogurt, gram flour, ginger garlic paste, red chilli powder, half of biryani masala, salt, coriander powder, cumin powder and sugar. Mix them well without any lumps.
  5. To this add the cubed paneer and vegetables.Mix well and keep covered for 20 minutes.
  6. In a deep pot take water and bring this a boil. Add whole Garam masala potli, salt to taste and lemon juice. Give it a good stir and add soaked Basmati rice to it.Cover and cook rice until 80% done.
  7. Turn off the heat and drain the water.Remove and discard Garam masala potli.Take the rice into a bowl drizzle a spoonful of oil , toss and set ready.
  8. In a Kadai or heavy bottomed pan add ghee and oil. Once hot add sliced onions, slit green chilli and saute until onions turn pinkish. Add the Marinated vegetable and paneer mix along with its juices,if any and cook on low to medium heat .
  9. After a couple of minutes turn the vegetables and paneer around. Add peas, chopped tomato to it and Cook the mix until potatoes are almost done. Be cautious as Gram flour tends to stick at the bottom.
  10. As the veggies get done remove half of the mix seperately. Add a layer of rice over the vegetable mix. Sprinkle with some biryani masala, Garam masala, salt to taste , chopped mint, chopped coriander and brown onions.
  11. Repeat the layers with remaining vegetables and rice .Sprinkle the rice again with chopped mint ,coriander and brown onions.
  12. Drizzle a teaspoon of ghee over the top. Cover the kadai with foil and seal the edges.
  13. Close it with a tight lid and create dum on medium low heat for 12 to 15 minutes.
  14. Later drizzle the saffron milk , add roasted cashews and turn off the heat. Keep it covered for 5 more minutes so that all the flavours soak in well.
  15. Give it a gentle mix without disturbing it much. Serve it hot with raita and salan of choice.
  16. Delicious and flavourful Vegetable Dum Biryani is ready to devour. A perfect party meal that just blows your senses away !
