There are many ways to cook bitter gourd. I love stuffed bitter gourd. I will share this spicy and tangy bitter gourd stuff recipe and it is not bitter. It is very easy to cook and tastes yummy. A person who dislikes Karela will also fall in love with this dish!

Ingredients Serving: 4

  1. 3 Keralas /Bitter gourd (Long green ones)
  2. 1 Tsp Haldi / Turmeric
  3. 1/2 Tsp Salt
  4. 1 Tsp Red Chilli Powder
  5. Juice of 1 lemon
  6. 3 Medium Sized onions chopped
  7. 1 inch Ginger chopped
  8. 6 Garlic pods chopped
  9. 2 Red Tomatoes chopped
  10. 1 Tsp Kali Mirch /Pepper corns
  11. 1 Tsp Dhania powder/ Coriander Powder
  12. 2 Tsp Jeera Powder / Cumin Powder
  13. 1/2 Tsp Garam Masala
  14. 1/2 Tsp Chaat Masala
  15. 3 Dry Red Chillies
  16. 8 Cashews
  17. Salt to taste

Instructions

  1. Cut each karela into 4 parts. Scoop the seeds, ensure there is a thin layer at the bottom to stuff the masala. Mix 1/2 Tsp salt, lime juice and haldi / turmeric and keep it aside for 45 minutes. After this time, throw the water away.
  2. Heat 1/2 tsp of oil. Add kali mirch/ pepper corns.Then add chopped garlic and ginger. Roast for 1 minute. Add onions and roast till they turn brown. Add cashews, red chilli, chilli powder, garam masala and stir.
  3. Then add jeera powder, dhania powder and chaat masala and stir again. Mix well and roast it well for 5 minutes. Add the chopped tomatoes, mix well and keep it on a low flame till the tomatoes turn mushy and blends well with the masala.
  4. Turn off the flame and allow it to cool. Once the masala has cooled, blend it well to a fine paste in a blender. Add salt to taste. Blend this mixture once again.
  5. Stuff the karelas with this masala generously. Bake in an oven at 180 degree celsius for 30 minutes. Heat one tsp oil in a wok. Add the baked stuffed karelas. Add the extra masala. Roast on a medium flame for 25 mins. Turn off the flame.
  6. Garnish with roasted sesame seeds and serve hot with steamed rice to enjoy.

Where can i find butter gourd in Europe? I know on masjid they harvest but dont know if in Halal stores will be available
