ABOUT Infused Raw Honey ice cream RECIPE

The best ice cream in the rains. Fresh whole milk starched with arrowroot powder and sweetened only with honey infused with cloves and lemon rind makes it absolute divine and luscious.

Ingredients Serving: 4

  1. Milk - 2 cups + 1/4 cup
  2. Raw Honey - 1/2 cup
  3. Fresh cream - 1 1/2 cup
  4. Cloves - 5
  5. Lemon rind - of half a lemon
  6. Vanila essence - 1 tsp (optional)
  7. Arrow root powder - 1 tbsp
  8. FOR GARNISH:
  9. Honey glazed nuts - almonds and cashew
  10. Honey comb:
  11. Sugar - 2 tsps
  12. Water - 1 tsp
  13. Baking soda - a pinch

Instructions

  1. Add the cloves and lemon rind to the honey and heat on double boiler for some time
  2. Keep aside. Leave it to cool and rest.
  3. Mix the arrowroot powder with 1/4 cup milk and keep aside
  4. Now Take a vessel add the milk and the infused honey whisk and keep on medium flame
  5. As it bubbles add the arrowroot milk mixture gradually whisking continulously
  6. As the milk thickens put of the flame and let it cool
  7. Now can discard the cloves or keep
  8. Add the cream( and Vanila essence if desired) and use electric beater and beat for few minutes
  9. Freeze the mixture for 4 hours
  10. Beat once with electric beater in between.
  11. Glaze few nuts, cashews and almonds with 2 tsp honey on low to medium flame and keep on parchment paper for garnish
  12. Crush few glazed cashew for garnish
  13. Make honey comb by dissolving sugar with water on gas. When it changes to a dark brown caramel colour add the baking soda and mix to combine.
  14. Pour on a parchment paper and leave it to cool. On cooling break into peices for garnish
