ABOUT Badam Puri RECIPE

Traditional sweet regularly made in festival and marriage.

Ingredients Serving: 4

  1. 1 cup maida + little for dusting
  2. Little salt
  3. 2 tablespoon melted ghee
  4. 2 tablespoon ghee
  5. 4 cloves
  6. 1 cup sugar
  7. 1 Cup water
  8. Little cardamom powder

Instructions

  1. In a bowl add maida, salt, melted ghee and mix gently.
  2. Now add water in batches and prepare a soft dough. Allow it to rest for 30 minutes.
  3. Once it's nicely rested, make a small even shaped balls.
  4. Take a ball and roll it out thinly in a circle form. Here rolling it thinly is important (as we fold it in the next steps - if the rolling is thick it doesn't cook from inside).
  5. Now add ghee and spread it all over evenly.
  6. Now fold it into half. Apply ghee again on the half circle. Again fold it half. So that you get a triangular shape.
  7. Now take a clove and press it gently so that when the badam puri is fried it doesn't bloom and the layers are not separated.
  8. Repeat the process for other prepared balls and prepare batches of the same.
  9. Heat oil on a low flame. Once it heats up add the prepared triangle and fry till golden brown.
  10. Mean while in a pan add sugar and water. Bring this mixture to boil. Boil until sugar dissolves and the sugar syrup reaches a one thread consistency.
  11. One thread consistency - once the sugar syrup is cooked for about 5 minutes, take the syrup in a spoon and with your thumb finger and index finger pull out the sugar syrup. A thin thread like thing will form. That's the correct consistency. If you are not getting the thin thread then cook the syrup for few more minutes. Keep a watch on it (Do not over cook the syrup or else the consistency becomes thick).
  12. Now add cardamom powder and mix.
  13. Add the fried triangles into the sugar syrup and with a help of a spoon coat it evenly. Soak it.
  14. Repeat for other prepared puris. Now the badam puri is ready.
