ABOUT Mango Yoghurt Parfait RECIPE

It is amazing how your children can help you with assembling the layers of the parfait which in turn also get their creative juices to flow. It isn’t challenging at all once you keep the ingredients in front of your kids and allow them to use their imagination in filling the glasses as they desire. It gives them a boost of confidence when they see their finished product being enjoyed by all so dearly.

Ingredients Serving: 5

  1. 1 cup Digestive biscuits
  2. 2 tbsp melted Butter
  3. 1 ½ cup hung/thick Yoghurt
  4. ½ cup Double cream or Whipping cream
  5. 1 ĵ cup fresh Mango puree
  6. 1 Mango (cubed)
  7. ½ tsp Vanilla essence
  8. 1/3rd cup powdered Sugar
  9. Few Pomegranate pearls for garnishing (optional)

Instructions

  1. Take digestive biscuits and butter in a food processor and pulse or crush using rolling pin until you get coarse crumbs. Set aside.
  2. Whisk together hung yoghurt, cream, powdered sugar and vanilla essence in a standing mixer, with whisk attachment.
  3. Whisk until all the ingredients get combined and reach sauce consistency. Fill this in a disposable piping bag and set aside until use.
  4. With all the ingredients ready in hand, call out children to assist you in assembling. Start by lining the bottom of serving glasses with biscuit-butter mixture up to an inch.
  5. On top of it allow the kids to pipe or spoon yogurt-cream mixture and then layer with mango puree, mango cubes, biscuit-butter, yogurt-cream and mango pieces
  6. Repeat the same until you fill in other glasses. Serve by garnishing with pomegranate pearls.
